Maiko Amemiya: A vegan chef, originally from Tokyo. After graduation from a vegetarian cooking school in New York City, she started her career at a vegan restaurant, “COUNTER Organic Wine and Martini Bar” in Manhattan. Then she moved to London to work at a gourmet raw and vegan restaurant “SAF Shoreditch”. Soon she became a sous chef and took charge of entire kitchen duty together with a head chef. As a culinary consultant, later on, she moved to Istanbul for SAF’s headquarter. She achieved a vegan/raw catering team for weight-control with local chefs. Currently, Maiko resides in Tokyo. Through various projects she tries to spread vegan love to both vegetarians and non vegetarians. In 2013, she published her first recipe book (in Japanese).
